May 2020 — BLTA Salad

Here’s a simple, light lunch or dinner that combines everything you love about a BLT sandwich, but without all the carbs! Perfect to take advantage of the spring lettuce crop from the farmer’s market or your backyard garden!


  • 4 cups lettuce or spring mix
  • 6 slices turkey bacon
  • 1-2 small tomatoes, such as vine or Roma, chopped
  • 1 avocado, sliced
  • 1/4 cup whole wheat croutons (we like Wegmans brand)
  • juice of 1/2 lemon
  • 1 Tbsp. olive oil
  • salt and pepper to taste


  1. Cook turkey bacon according to package directions, or bake in the oven on 350 degrees until crispy. Allow to cool, then crumble.
  2. Toss lettuce, tomato, lemon juice, olive oil, salt and pepper in a bowl. (Or toss lettuce and tomato with your favorite salad dressing.)
  3. Divide salad on to two plates and top each with half the crumbled bacon, half the avocado, and half the croutons.
