1 pint grape tomatoes, halved lengthwise
8 oz. block feta cheese
1 lb. chicken breast tenders, cut into chunks
1 medium shallot, minced
3 cloves garlic, minced
2 Tbsp. olive oil
Optional: Crushed red pepper flakes to taste
1 lb. whole wheat pasta (Or substitute cooked spaghetti squash, zucchini noodles, or other veggie noodles for low-carb)
Add tomatoes, chicken, shallot, garlic, and olive oil to a baking dish with salt and pepper to taste (as well as crushed red pepper, if using). Toss to coat, and then ensure mixture is spread evenly across the bottom of the dish.
Set the block of feta in the center of the dish, on top of the tomato/chicken mixture.
Bake at 400 degrees for about 40 minutes, until cheese is starting to brown around the edges, chicken is cooked through, and tomatoes have softened.
Meanwhile, cook the pasta, spaghetti squash, or veggie noodles. If using pasta, reserve 1/2 cup of the pasta water before draining.
Mash together the cheese with the chicken and tomatoes in the baking dish. Mix the sauce with the pasta or veggie noodles. (If the sauce is too thick on pasta, you can use a little of the reserved pasta water to achieve the desired thickness.) Divide into 4 bowls for serving.
