January 2021 — Breakfast Sandwich Makeover

This month we have a very special recipe courtesy of our trainer Lori’s 13 year old son: A healthy version of a fast food staple, the sausage McMuffin. It’s packed with protein and served up with whole grains- a great start to your day!

Ingredients:

  • 2 eggs (or 3 egg whites)
  • 1 tsp. olive oil
  • salt and pepper to taste
  • 1-2 Tbsp. reduced fat shredded cheddar cheese OR 2 slices reduced fat cheddar cheese (optional)
  • 2 100% whole grain English muffins
  • 2 turkey breakfast sausage patties (we like Jones Farm, which has fewer additives than other brands)

Directions:

  1. Scramble eggs and add salt and pepper to taste. Heat a nonstick pan over medium-high heat and add olive oil. Once the pan is hot, add the eggs and shredded cheese, if using. NOTE 1: You might try using an egg ring to keep the shape and size manageable. NOTE 2: You can also cook the eggs in the manner you prefer, such as over easy or sunny side up.)
  2. While eggs are cooking, separate and toast the English muffins. Microwave sausages on a plate, covered with a paper towel, for 1 minute.
  3. Add 1 sausage patty and half of scrambled eggs (along with sliced cheese, if using) to each English muffin to create a sandwich.
  4. Serve with a side of vegetables such as sliced tomatoes.
