October 2019 — Thai Burgers and Salad with Turmeric Dressing

Try this new spin on a classic hamburger, served over a mixed green salad to keep it low-carb. The dressing incorporates Greek yogurt for its probiotic benefits and also turmeric, an anti-inflammatory and antioxidant!

Ingredients:

For the burgers:

Note: All seasonings can be adjusted to taste!

  • 1 lb. 93% lean ground turkey
  • 1/2 red onion, diced
  • 1 Tbsp. chopped cilantro
  • 1 Tbsp. chopped mint
  • 1 Tsp. fresh ginger, grated
  • 1/2 lime, juiced
  • 1 Tsp. fish sauce
  • Salt and pepper to taste

For the dressing:

Note: All seasonings can be adjusted to taste!

  • 1 (5.3 oz.) cup nonfat Greek yogurt
  • 1/2 lemon, juiced
  • 1/4 cup cashews, almonds, OR sunflower seeds
  • 1 Tbsp. ground turmeric
  • 1 Tsp. fresh ginger, grated
  • 2 cloves garlic
  • 1 Tsp. sugar
  • Salt and pepper to taste

Instructions:

  1. Add turkey and seasonings to a bowl and mix well by hand. Form into 4 patties.
  2. Grill or pan saute patties (with a little olive oil), turning once, until internal temperature reaches 165 degrees.
  3. While burgers are cooking, add all dressing ingredients to a food processor or blender and process until smooth. (Taste test to adjust seasoning to your preferences.) If dressing is too thick, add water 1 tsp. at a time and process until desired thickness is reached.
  4. Serve burgers and dressing over mixed greens and other salad vegetables as desired.
