Easy, healthy, and packed with protein! This is out trainer Lori’s own recipe for mini turkey meatloaves, made in a muffin tin. The best part is you can double the recipe and easily freeze the leftovers!
1 lb. 99% lean ground turkey
1 small zucchini, finely grated
1/2 cup quick oats
1/4 cup grated Parmesan cheese
1/4 cup ketchup
2 tsp. Worcestershire sauce
Salt, pepper, garlic powder, onion powder to taste
Mix all ingredients by hand until well combined.
Divide into 6 equal parts and roll each part into a ball.
Spray a 6-muffin tin with cooking spray and gently press a ball into each space. (If using a 12-muffin tin, add a little water to the empty spaces to prevent the pan from warping.)
Bake at 350 for about 15-18 minutes, or until cooked through and slightly browned on the outside.
