January 2020 — Cauli-Creamed Spinach

Love creamed spinach but not crazy about all the extra calories? Try this recipe using cauliflower puree in place of milk or cream for a tasty side dish!

Ingredients:

  • 1/2 Tbsp olive oil
  • 2 Tbsp minced shallots
  • 1 Tbsp minced garlic
  • 1/4 tsp salt, plus additional to taste
  • 2 cups pureed cooked cauliflower OR 1 pkg (16 oz.) Wegmans Organic CauliCreme, thawed
  • 1/4 tsp freshly ground pepper, plus additional to taste
  • 1/4 tsp ground nutmeg
  • 1 pkg (11 oz.) fresh baby spinach
  • 1/4 cup freshly grated Parmesan cheese (Optional)

Directions

  1. Heat olive oil in pan on MED-LOW. Add shallot, garlic, and salt. Cook, stirring occasionally, about 2 min, until soft but not browned.
  2. Add cauliflower puree, pepper, and nutmeg; stir to combine. Increase heat to MED-HIGH. Cook, stirring occasionally, 3-4 min, until mixture begins to bubble.
  3. Add spinach to the pan in handfuls; stir as it wilts and continue adding more spinach. Add Parmesan cheese, if using, and season with salt and pepper to taste.
